Roasting Hojicha is a delicate art. Under-roasted, the tea retains a raw, grassy note. Over-roasted by just a few seconds, it develops a harsh, burnt taste. We capture the single ideal point where a comforting, nutty aroma is fully expressed and the flavor becomes exceptionally mellow and rounded.
